Gypsophilia paniculata (Caryophyllaceae) - Baby’s breath

A large airy plant well known for its small white flowers that are a standard bouquet filler. Native to Eurasia and the hot dry areas of Turkey and Russia, this plant likes a poor, well drained soil in full sun. Once established it grows a large tap root that makes the plant nearly drought proof and difficult to move. Its airy appearance makes mix well with other plants. The name Gypsophila means ‘lover of gypsum’ meaning it appreciates a periodic application of lime. Occasionally weedy in some climates, our long winters seem to keep seed dispersal in check.
